International Taco Day, celebrated on October 4 , pays homage to one of the most traditional and beloved dishes in Mexican cuisine. The taco, made with a tortilla stuffed with ingredients such as meat, chicken, beans, cheese and guacamole, is a symbol of Mexican cuisine. The date is an opportunity to celebrate the diversity of flavors of this dish, whether at home, in restaurants or at festivals. The origin of the taco is uncertain, but it is believed to date back to the Aztec period, when Emperor Montezuma used tortillas as an eating utensil. Another historical record associates the taco with rural workers who brought their meals wrapped in tortillas. Corn, the staple of Mexican cuisine, is present in the traditional recipe, as well as in modern adaptations, such as the taco Al Pastor, a creation of Lebanese immigrants in the 1960s, inspired by shawarma.
