Bandeja Paisa is an emblematic dish of Colombia, originating from the coffee axis, especially Antioquia. Its name reflects the Paisas cuisine and the need to be served on a tray due to the abundance of ingredients. Created around 1950, this culinary tradition varies in ingredients, but its essence persists. With up to 14 components, such as beans, cracklings, ground meat and fried egg, it is accompanied by mazamorra with milk and sweet macho. Some variants, such as the seven meat tray, incorporate additional elements, maintaining cultural and gastronomic richness.
