December 30th Bacon Day celebrates the versatility of bacon, encouraging its consumption in a variety of recipes, from savory dishes to desserts. Created in 1997, the date reminds us that bacon is not just for breakfast. In the United States and Canada, it is made with pork belly, while in other countries different cuts are used. Pork consumption dates back to 4,900 BC, with the Chinese domesticating pigs, and the practice spread to Rome and Greece. The word “bacon” emerged in the 12th century, and in the 17th century it began to refer specifically to salted and smoked pork belly. During the Middle Ages, bacon was popular among peasants, and the expression "bring home the bacon" was born in the 12th century, rewarding married men who did not fight with their wives for a year and a day.
