October 21 is Nacho Day, in honor of Anaya, who died in 1975, and a bronze plaque was erected in Piedras Negras. Nachos, a popular dish in the United States and Mexico, consist of triangular corn tortillas topped with cheese and jalapeño peppers. The delicacy was created in 1943 by Ignacio "Nacho" Anaya in Piedras Negras, Mexico, when a group of American soldiers' wives asked for something to eat at the end of the day. Anaya improvised a snack with tortillas, melted cheddar cheese, and peppers, and called the dish "Nachos Especiales". The original recipe was published in 1954, and over time, nachos' popularity spread, especially in Texas. Carmen Rocha, a waitress, brought the snack to Los Angeles in 1959, and its popularity grew after talk show host Howard Cosell mentioned them during baseball games. The dish has become an icon of Mexican cuisine.
